1. Raw rice: 500 g
2. Coconut: 2 cup(grated)
3. Jaggery: 1 kg
4. Ghee: 500 g
5. Cardamom: 6
6. Cashew nuts: 50 g
7. Vanilla essence: 1 tsp
8. Coconut oil: ¼ cupSteps to prepare Kerala karutha (black) halwa
Step 1: Soak the rice in water for few minutes and then wash it well and drain it. Keep it aside.
Step 2: After the rice is well drained grind it into a fine powder without a little drop of water and keep it aside. Make sure the powder should be dry. Any little drop of water makes the powder to form lumps
Step 3: Grind the grated coconut and extract the 1st, 2nd and 3rd milk from it by adding some water. Make a glass of 1st extract and the 2nd and 3rd extract should be around 9 glasses.
Step 4: Pour some water in a vessel, melt the jaggery and strain it and keep it aside.
Step 5: Take a pan and heat it. Mix the 9 glasses of coconut milk, jaggery solution and rice flour. Stir it well and make sure that there are no lumps in it. Formation of lumps spoils the shape of the dish.
Step 6: Add ghee and the 1 st extract of coconut milk into it. Stir well until it becomes thick. Then add the cashew nuts, powdered cardamom, vanilla essence, little coconut oil and Stir well. Remove from heat.
Step 7: Grease a plate or a mould with some coconut oil and pour this consistency on it. Cool it for a few minutes and cut it into a desired shape. Now your tasty Kerala karutha halwa is ready to serve.
Extra tip: You can use any other kind of essence and colour powder to prepare halwa in different colour. You may also use dry fruits for preparing halwa.
