In Kerala, they celebrate the Onam extremely always. During that time the Moru kachiyathu is most famous food in Kerala. We all like to prepare Moru kachiyathu ourselves. Some people prepare Moru kachiyathu in their home for festivals specially Onam. But we don't know that how to cook this food. Here I have given very simple method to prepare Moru kachiyathu.Ingredients for preparing Onam special Moru Kachiyathu
Buttermilk /Beaten Sour curd : 500 ml/1/2 l/b (room temperature)
Ginger : 2 tsp (finely, chopped)
Shallots/Small onion : 2 (chopped)
Green chili : 3-4 or to taste (chopped)
Dry red chili : 2
Turmeric powder : ½ tsp
Mustard : ½ tsp
Fenugreek : ¼ tsp
Curry leaves :1-2 sprig
Salt to taste
Coconut Oil/ Cooking Oil : 1 tbsp or to temper the ingredientsPreparation methods of Moru Kachiyathu
Step 1:
To make the curd smooth, mix it well. If you want, add enough water with curd to mix.
Step 2:
To keep it smooth, add small amount of water with curd at a time blending it.
Step 3:
Heat the oil in pan and then boil mustard & fenugreek seeds. Add dry red chili, chopped small onion, green chilies, chopped ginger, curry leaves, and fry it for a minute.
Step 4:
Include along with turmeric powder, salt to taste and mix these ingredients well.
Step 5:
Add buttermilk or well beaten sour curd with that and then mix well.
Step 6:
Maintain the heat in medium to low with continuous stirring till the mix foams up and then increase again. But never to the point of boiling. If it boils, the full dish is insolvent. It will take time to foams up around 5 to 7 minutes.
Step 7:
After removing from fire, stir well for a few minutes and then serve with rice.
Extra Tips
1. Use sour curd to acquire the good taste. Because it can be chilled for 3 days
2. The buttermilk should be at room temperature, if not it may curdle
3. To keep away from curdling, maintain stirring continuously
