The Spicy Mutton Curry recipe is a great food in Kerala and It is one of the most famous recipes in Kerala. Kerala people always prefer very spicy foods. Most of the people are very eager to consume non-vegetarian. These are the main reason for mutton curry is get famous.Ingredients
• Mutton – ½ kg, cut into medium size pieces
• To roast and grind
• Coconut – ¾ cup
• Whole coriander (kothamalli)- 1 tbsp
• Dry red chilli – 4
• Whole black pepper – 1¼ tsp
• Fennel seeds (perumjeerakam) – ½ tsp
• Cloves – 3
• Cinnamon – a small piece
• Pearl/Small onion – 3, sliced
• Curry leaves – 6
• For masala
• Onion – 3 medium-big, sliced
• Crushed/grated ginger and garlic – 1½ tsp each
• Chilli powder – 1 tsp
• Tomato – 1 medium -big, sliced
• Salt
• Oil – I used coconut oil
• To temper
• Pearl/small onion – 4, sliced
• Curry leaves
• Pepper powder – ½ tsp (refer notes)
• Chopped coriander leaves – 1 tbspPreparation Method
Step 1:
Take a pan and pour a small amount of oil and heat it. Add coconut, whole coriander, dry red chilli, whole black pepper, cloves, cinnamon, pearl onion, fennel seeds, curry leaves into the pan.
Step 2:
Stir fry till the coconut changes brown color slightly. Take away a pan from burn and let it cool.
Step 3:
After it get cool crush that without including water. Keep it separate.
Step 4:
Heat oil in a pressure cooker and add some sliced onions. If it changes brown color, then you should add ginger and garlic. Cook well for about 2-3 minutes when we get the raw smell from it.
Step 5:
Add chilli powder and cook for about 2-3 minutes. Then add sliced tomato and cook till it changes soft. After that add cleaned pieces of mutton and mix well.
Step 6:
Now add 2 cups of hot water into the pressure cooker. Cooker steam till the mutton is done. Already you know that normally how much time mutton can steam in the burn.
Step 7:
Pour ¼-- ½ cup of hot water to the ground masala and mix well. Then pour it to the cooked mutton and cook on low flame for about 5-10 minutes. After thatturn off the burn.
Step 8:
Heat oil in a pan and add some sliced pearl/small onion and curry leaves. Stir fry till the onion changes brown color.
Step 9:
Turn off the flame and add pepper powder and coriander leaves. Finally add this to the curry and mix well.
Step 10:
Now you can serve this recipe with rice/chapthi/pathiri etc;
