Rogan Josh is a delicious and one of the famous dishes in and around Kerala. This mutton dish is the favorite of people mostly like spicy food. 'Rogan' means the ghee which is produced when mutton is cooked properly while 'josh' means red colour. Its red colour is due to the Kashmiri chilli added to it. Rathanjot is a plant which is also used to bring its deep red colour. It is very nutritious and healthy with mouth watering taste. Try it and present a new dish to your family members.Ingredients
•Pieces of mutton – 1 kg
•Lemon extract – 3 table spoon
•Curd – 1 cup
•Salt – 1 teaspoon
•Garlic (crushed) – 2 pieces
•Ginger (crushed) – 1 inch long
•Oil – 4 table spoon
•Cumin or Jeera - 1/2 teaspoon
•Fresh Cardamom – 4
•Vazhana ila - 2
•Onion (sliced) – 1
•Garlic – 3 pieces
•Coriander powder – 2 teaspoon
•Cumin or Jeera - 2 teaspoon
•Kashmiri chilli powder – 2 teaspoon
•Tomato (sliced) – 4
•Tomato puree – 2 table spoon
•Water – 3/4 cup
•Fried jeera and Bay leaves – to decorateHow to prepare
Mix the second ingredients all together and paste it over the mutton pieces so as to keep it in fridge for one night. Take a large pan and pour oil into it. When oil becomes hot in pan then adds jeera and fry it up. Also add Cardamom and Vazhanayila to it. After some time add onion and garlic so as to fry it for about five minutes. When it gets properly fried up mix the seventh ingredients to it completely and keep it in sim flame for a while. Now take out the mutton from the fridge and mix it to the prepared masala. Cook it after adding tomato, tomato puree and water for one hour. Decorate it with fried jeera and bay leaf and serve it along with basumathi rice.
