•Duck – 3/4 kg
•Dry red chillies (seed removed) – 30
•Pepper – 1 teaspoon
•Cumin or Jeera – 1/2 teaspoon
•Mustard – 1/2 teaspoon
•Cinnamon stick – 1 piece
•Clove – 6
•Turmeric powder – 1/2 teaspoon
•Shallot – 18
•Ginger – 1 inch piece
•Garlic – 6 big pieces
•Vinegar and salt – to taste
•Coconut (crushed) – 1 cup
•Oil – 2 big spoon
•Boiled water – 1/2 cupHow to prepare
First clean the duck properly and cut it into large pieces. All the ingredients from 2nd to 8th should be separately fried and crushed properly. Ginger, garlic and shallot should be crushed in separate pan. Fry the coconut until it gets a slight red colour. Now pour some oil into a frying pan and allow it to get hot. Then add crushed shallot, garlic and ginger along with the ingredients from 2nd to 8th and keep it under sim flame for a while. Now add the meat into this masala and mix it well. When its water content gets reduced add proper amount of salt, vinegar and hot water to it and cook it for 20 minutes in a pressure cooker. When it is cooked pour some coconut along with water into it. Cook it again for 10 minutes by stirring continuously and keep it aside. You now have your 'Nadan Tharavu Roast' ready. It can be served along with 'Puttu' or any other dish according to your wish.
