Delicious tomato rice recipe with paneer (cheese) and groundnut

Tomato rice is one of the famous and delicious dish made mainly to have during lunches. Tomato added in rice will double its taste and will also have many other health benefits. Consumption of tomato will prevent cancer, thrombosis, diabetes, heart failure, inflammations, cardiovascular diseases, respiratory problems like asthma, damage of DNA, cataracts, etc. Tomato and coriander are also used in the dish to make it more attractive. Cheese (paneer) and ground nuts added will multiply the quality of the dish. This dish has a unique taste and is not like any other types of biriyani. It is easy to make and all it's ingredients are available in market. Rather than cheese and ground nuts, items like mushroom, caswnuts, capsicum, etc. according to the taste required. 1) Tomato paste (crushed and sieved) - 3/4th a cup.
2) Washed rice - 3/4th a cup.
3) Pieces of cheese (paneer) - 3/4th a cup.
4) Chilli powder, turmeric powder, cumin powder and salt - to taste.
5) Oil - 4 table spoon.
6) Groundnut - 1/4th a cup.
7) Cumin seeds - 1/2 teaspoon.
8) Onion - 1 fully crushed.
9) Crushed garlic - 1 teaspoon.
10) Chilli powder - 1/2 teaspoon, Salt to taste.
11) Boiled water - 2 cup.
12) Lemon extract - 1 teaspoon.
13) Crushed coriander - 1/4th a cup. How to prepare
Take the paneer (unsalted white cheese) to mix it with the fourth ingredients given and keep it aside after frying it lightly in pan. Now fry up the groundnut in sufficient amount of oil until it acquires a light brown colour and drain it out. Also dry cumin seeds and onion in the same oil until its colour also changes slightly and then add garlic to it. After one minute mix the prepared paneer masala with the above fried ingredients and stir it softly. Now add the tomato paste with sufficient amount of chilli powder and salt into the paneer masala and boil it for sometime. Spread the fresh rice randomly over the above boiled paneer masala and add two cups of water. Close the pan and cook it under simply flame. When it is properly cooked, finally add the groundnuts and lemon extract and it thoroughly. Decorate the served tomato rice with some coriander leaves and tomato if needed. Now you have the delicious tomato rice in front of you.
Nice dish that i always used to try with some modification. After adding the oil to the pan you can add one brinji leaf, cinnamon,clove,and cardamom and Sombo seeds. It will be a different experiance. You can add soaked green pea, and meal maker along with rice. I used to try ths in pressure cooker with soaked normal ponni rice, biriyani rice or basmathi rice. For Basmathi and biriyani jeera rice I am using 1 and half cup water. But for normal ponnirice 2 cup of water for one cup of rice. Then extra one more item is the ginger garlic paste.
