Mushroom fry
How to prepare mushroom fry?
INGREDIENTS:
Button mushroom:400gm
Thin coconut slices:2/3cup
Sliced shallots:1 1/2cup
Chopped garlic:3cloves
Chopped ginger:1"piece
Green chillies:2
Curry leaves:5sprigs
Chopped tomato:1
Ginger-garlic paste:1tbs
Chicken masala:1tsp
Chilli powder:3/4-1tsp(as per taste)
Coriander powder:3/4tsp
Turmeric powder:1/4tsp
Pepper powder:1/4- 1/2 (as per taste)
Garam masala:1/4tsp
Coconut oil:4tbs -5tbs,as required
Salt,to taste
Chopped coriander leaves:a few
METHOD:
Wash,pat dry&quarter the mushrooms.
Grind chopped tomatoes into a fine paste.
In a large kadai,combine ginger-garlic paste,chicken masala,chilli,coriander,turmeric,pepper n garam masala pdrs,tomato paste,2sprigs curry leaves&enough salt.
Add mushrom pieces&toss well to coat.
Place on medium heat&cook covered until mushroom is tender.
Remove the lid n allow any excess moisture to evaporate,keep aside.
Heat enough oil in a non-stick pan.
Add coconut slices&fry till golden brown n crisp.
Add shallots,chopped ginger,chopped garlic,green chillies n remaining curry leaves.Sprinkle some salt& saute until golden brown.
Now add cooked mushroon,mix well&fry it for 12-15min,stirring occasionally to prevent sticking.
Remove from heat n garnish with chopped coriander leaves.
Serve hot with rice/rotis…
