Potato Coconut Curry Recipe (Kerala style)

Potato Coconut Curry Recipe (Kerala style)

Potato - 3 (Cut into small pieces)
Salt - As required
Green chilly - 5 or 7
Ginger - 1 piece (1 inch length)
Coconut - 1 cup
Coriander powder - 4teaspoon
Red chilly powder - 11/2 teaspoon
Turmeric powder - 1teaspoon
Garlic - 2 flakes
Curry leaves - 4 or 6 leaves
Fennel seeds - 1teaspoon
Oil - 1teaspoon + 1 Table spoon
Onion chopped - 1
Onion sliced - 1
Tomato sliced - 1

Preparation:-

1) Cook Potato pieces with Turmeric powder and Salt.

2) Heat 1 teaspoon of oil in a pan. Roast coconut, Fennel seeds, Garlic and Curry leaves. When the coconut turns golden brown, add coriander powder and roast for 30 seconds. Add chilly powder. Grind to make a fine paste.

3) Add paste of roasted coconut to the cooked potato. Add some water if required.When the gravy begins to boil, turn off stove.

4) Heat 1 table spoon of oil in a pan. Sauté sliced onion till the onion slices become transparent. Add Chopped Green chilly and Ginger and saute well.Add tomato slices and saute for 1 minute.Add this masala to potato curry.Stir well.

Garnish with curry leaves. Potato coconut curry is ready to serve. Serve it with Chappathy, Rice and Rice pathiri.
