Lemon cucumber (Vellarikka) Coconut curry Recipe



Ingredients

Lemon cucumber (Vellarikka) - 200gm
Coconut milk (First yield) - 1cup
Coconut milk (second yield) - 2 cups
Green chilly - 7
Curry leaves - 10 leaves
Whole dried red chilly - 3
Mustard seeds - 2 spoons
Coconut oil - 4spoons
Salt - To taste


Vellarikka coconut curry



Preparation

• Cut cucumber into small pieces.
• Cook cucumber with second yield of coconut milk, salt and green chilly.
• When the cucumber is cooked well, add first yield of Coconut milk. Stir well for 1minute on low flame. Turn off stove.
• Heat coconut oil in a pan. Add mustard seeds and allow to splutter. Add whole dried red chilly and curry leaves. Add this oil, curry leaves, red chilly and mustard seeds to vellarikka curry.

Delicious Kerala style Vellarikka curry is ready to serve.
