Onam Special Recipes - Kalan,Olan and Thoran

Kalan


onam
Ingredients

  1. Grated coconut-1/2qty
  2. Water-1tbsp
  3. pepper powder-1tbsp
  4. Cumin seeds-1/2 tbsp
  5. Turmeric powder-1/4 tbsp
  6. ghee-3 tbsp
  7. Dried chilli-2 nos
  8. Mustard-1 tbsp
  9. Curry leaves-1 spring
  10. Fried and Powdered fenugreek-1/2 tbsp
  11. salt-to taste
  12. Yam sliced to small pieces-100gm
  13. small raw banana-1no
  14. Green chillies-3nos
  15. Mashed yogurt-1/2 litre

Method of Preparation

  • Remove the skin of Nenthra kaya and slice into small pieces.
  • Grid coconut and cumin to paste form keep it aside.
  • Dissole pepper powder to 1/2 cup of water and purify water by passing through a cloth.
  • Cook vegetables using the water,Add turmeric powder and salt, When water dries add 1tbsp Ghee.
  • Pour the yogurt and mix well,when water dries add grinded coconut and fenugreek powder.
  • Turn off fire and season with mustard,dried chillies and curry leaves.

Olan

Ingredients

  1. Pumpkin-100gms
  2. Ash gourd-100gms
  3. Red gram dal-1tbsp
  4. Grated coconut-1/2qty
  5. salt-to taste
  6. Curry leaves-1 spring
  7. coconut oil-1tbsp

Method of Preparation

  • Remove skin of ash gourd and pumpkin and cut into small pieces.
  • Cook the vegetables and red gram dal in water.
  • Add salt and green chillies. Then add 1 cup coconut milk and boil.
  • When concentrate add 1/4coconut milk also,after some time add 1tbsp coconut oil and the curry leaves.
  • Mix well.

Thoran

Ingredients

  1. Black gram-1tbsp
  2. Garlic cloves-2
  3. Cabbage,Long runner beans-500gms(cut in to small pieces)
  4. coconut oil-2tbsp
  5. Mustard seeds-1/2 tbsp
  6. Dried chilli-4 nos
  7. salt-to taste
  8. Turmeric powder-1/4 tbsp
  9. Red chilli powder-1/4tbsp
  10. coconut -1 cup
  11. Curry leaves-1 spring
  12. Cumin seeds-1/2 tbsp

Method of Preparation

  • Crush the coconut ,cumin seeds,curry leaves and Garlic.
  • Put vegetables in a vessel boil with salt and chillies.
  • Heat oil in a pan add the turmeric and chilli powder biled vegetable,and crushed ingredients.
  • Mix well.
