Raw Rice (Unakkalari or Pachari) -2 1/2cup
Grated Coconut-4
Salt-to taste
cumin seeds-1/2 teaspoonHow to Prepare Vishu Kanji or Vishu Katta
First make milk from the grated coconut( should be thick onnam palu. Filter it (3 cup). Add the cumin seeds to the Coconut milk. Add a little more water and extract thin coconut milkof 6 1/2 cup. Add this second coconut milk to a heated uruli or vessel and stir occasionaly to avaiod curdling of milk.
hen it began to boil, pour the rice into it,close the vessel with a lid and cook well. Add the salt to the half cooked thin paal. When the rice is 3/4th cooked add the thick milk to the cumin seeds. Take care while stirring. Stir it continuously untill Vishu Katta is super.
